Chung Simon Fook Lam

It is with deep sorrow that we announce Chung “Simon” Fook Lam, 77, passed away in the early morning on September 23, 2026. Simon was born on November 22, 1948 in Ngau Kwu Long Village on Lantau Island in Hong Kong. Simon emigrated to the United States in 1969 with his Dad to meet his Uncle. Shortly after arriving in the United States, he served in the U.S. Army in Germany for 2 years during the Vietnam War. Simon spent most of his life working in restaurant businesses in Brooklyn, Maine, Minnesota, and Long Island. His most notable achievement, Chef Wong’s, was a successful Chinese restaurant he owned and operated in Plainview, Long Island. Simon’s greatest pride was the community he built and the relationships he formed along the way through his generosity and genuine care of his customers. In retirement, Simon enjoyed volunteering as a member of the American Legion Post 1291, going on fishing trips, and watching all the sports.

Simon found tremendous joy in spending time with his family and friends, which consisted of gathering around a table of dim sum and sharing good food. He showed his love quietly through acts of kindness (usually by cooking) and duty to others. He loved hosting Thanksgiving and family gatherings such as pool parties and barbecues in the summer. Simon was known for his tireless work ethic, loud jokes, and devotion to his loved ones. Whether you were family, a lifelong friend, or someone who simply crossed his path, Simon had a remarkable way of making everyone feel welcome and no one ever left his presence without a full belly. 

Simon is survived by his loving wife of 51 years, Julie Lam; son, Timothy Lam (Karen Lam); daughter, Jessica Lam (Connor Lam); and granddaughter, Nora Lam.
